650 kg of special grade Yamadanishiki from Yoshikawa in Hyogo Prefecture's Special A district, polished to 35%, is processed by hand and fermented at low temperatures, pushing koji making to its limits. The resulting brew is then hung up in special linen and filtered through the help of gravity. Only the resulting drops are collected and bottled for this sake. It has a pleasant melon-like mild aroma and gentle taste.
