Junmai is a term that literally means “pure rice”, which in this case refers to no brewer’s alcohol being added to the sake. While easy to assume, it is not correct to assume that Junmai is categorically better than sake with alcohol added. It is however gaining in popularity and extremely delicious! Important to note is that there are Junmai versions of Ginjo and Daiginjo as well (the non-junmai versions always having alcohol added). Expect Junmai to be more full-bodied than non-junmai sake with at least some acidity.
