This umeshu is made with plums soaked in Kubo Honke’s signature Kimoto Junmai sake, which sets it apart from many other store-bought umeshu that use shochu or other clear spirits. The taste is significantly more mellow and less tart than usual with lots of honey notes, so it would be suitable for someone with a slightly sweeter tooth. In any case, the plums clearly come across however you drink this, straight, on the rocks, or with club soda.

Fruit sake are a fantastic and approachable way to experience the Japanese brewing tradition. Radically different from western liquers, which are often sickly sweet, Japanese fruit sake are fresh, lively and well balanced. They are superb on the rocks on a warm summer day and delicious with soda as an aperitif. This umeshu uses the flavors and acidity from the Junmai Kimoto, in which the plums are soaked carefully. The addition of honey gives this umeshu the final touch to its delightfulness and elegance.
