A sustainable sake born from a collaboration between ZAKU and Sakura Sake Shop, created with a vision for the next 100 years. Nearly two years in the making, this project began with a simple question: can sake become more sustainable without compromising beauty, quality, or enjoyment? The result is a sake that brings together environmentally conscious craftsmanship and refined flavor. Brewed with โKaminoho,โ a sake rice variety unique to Mie Prefecture, the rice is cultivated by our contracted farmer, Kamio Farm in Suzuka City using a farming method that extends the mid season drainage period to help suppress methane emissions, a major greenhouse gas generated during rice cultivation. Every detail was carefully considered, from the use of reused glass bottles to labels printed with non VOC ink. In partnership with Zevero, COโ emissions across the entire process, from rice cultivation to packaging, were measured and visualized, resulting in approximately 30% lower emissions compared to conventional production. Crafted at 13% alcohol, the sake offers a lighter and more approachable style while maintaining the elegance, freshness, and balance expected from premium sake.

To create a lighter style that is gentler on the body, the alcohol content is set at 13%. Within its elegant sweetness, this sake expresses freshness, vibrancy, and a delicate lightness. Aromas reminiscent of melon and lychee are balanced by refreshing acidity and a subtle bitterness. Right after opening, it shows a fresh and tightly structured body, while over time it gradually develops more roundness and a fuller sweetness.

Shimizu Seizaburo Shoten, founded in 1869, is located in Suzuka, which is famous for its Formula One race track. In this region, which is blessed with limpid subterranean water from the Suzuka Mountains and high-quality rice from the Ise Plain, the brewing industry has long flourished. But many of these breweries have been forced out of business, and Shimizu Seizaburo Shoten is now the only brewery in Suzuka. The brewery uses mainly Mie rice grown by local contract farmers and brews on a small scale all year round. The brewery aims to craft a light sake that smoothly harmonizes with food, in pursuit of sake that fits with today's diverse cuisines.
