History
Founded in 1688, it is the only sake brewery still in existence as the official brewery of the Date family of the Sendai clan, and its mission is not only to brew sake but also to pass on the 800-year history and traditions of the Date family to the next generation.
On the other hand, it is also an innovative brewery that ushers in a new era by creating directly managed restaurants in Paris and Florence (currently closed) and operating Tohoku's best culinary school, wedding hall, and several authentic restaurants in Sendai City. Katsuyama's new sake, which aims to marry all kinds of cuisine from around the world, continues to offer new values that break with conventional wisdom, such as the luxury of centrifugal pressing, the concept of terroir, sake modeled after noble rot wines, and even sake that goes well with cigars.
