"Gonge PEAT" represents a groundbreaking achievement in sake brewing - the world's first sake crafted using rice bran (nuka) in the brewing process. Made from the rare "Tono No.1" rice variety, descendant of the legendary "Kame no O," this sake is made from rice grown on soil that has been cultivated for over 20 years using completely pesticide-free and fertilizer-free natural farming methods in Tono, Iwate Prefecture. The rice bran is roasted with rice straw before being added to the brewing process, embodying the philosophy of using every part of the rice without waste. This unprecedented approach required working with tax authorities to create new legal frameworks for its release.
