Chiba’s Tohei Brewery makes a great series of sake that showcase the different profiles of the rice used in them. This one is made by the “king of sake rice”, Yamadashiniki, that with 30% of the share of rice grown for premium sake, is the most widely used sake rice in Japan. Mild and relatively dry, it boasts firm acidity and delicious umami, with some spicy notes. A superb example of Japan’s preeminent rice type.

Sake to Celebrate

The name Fukuiwai's two Japanese characters stand for 'fortune' and 'celebration', and their sakes are designed to be reflective of that. Made to be easy to pair with food and having a good balance of aroma and taste, they are both unique and approachable and ideal for a 'celebration'. Furthermore, many of the Fukuiwai sakes highlight a particular rice variety. This one is made with the 'king of sake rice' Yamadanishiki, a sake rice from Hyogo.
