Nearly two years in the making, this project began with a simple question: can sake become more sustainable without compromising beauty, quality, or enjoyment? The result is a sake that brings together environmentally conscious craftsmanship and refined flavor. Brewed with “Kaminoho,” a sake rice variety unique to Mie Prefecture, the rice is cultivated by our contracted farmer, Kamio Farm in Suzuka City using a farming method that extends the mid season drainage period to help suppress methane emissions, a major greenhouse gas generated during rice cultivation. Every detail was carefully considered, from the use of reused glass bottles to labels printed with non VOC ink. In partnership with Zevero, CO₂ emissions across the entire process, from rice cultivation to packaging, were measured and visualized, resulting in approximately 30% lower emissions compared to conventional production.
