A traditional and very popular Junmai Daiginjo, this sake is made with completely local ingredients from Mie prefecture, Kami No Ho rice and MK-3-yeast. The Hanzo brand is a traditional sake brand, and so delivers a clean and soft taste with muted but elegant acidity. This sake pairs well with Japanese as well as Western good and is best enjoyed chilled in a wineglass.

Following a modest nose of honeysuckle and white grape, the palate is crunchy unfurling a velvet carpet of green apple wrapped in tart acidity. Good body and a medium finish.

A Traditional Type of Sake
While Ota Shuzo's Hanzo & brand is a very modern take on sake, their Hanzo brand is a traditional sake line that highlights local Mie ingredients. The Hanzo brand was established 25 years ago and named after the legendary Hattori Hanzo, who hailed from the Iga area where the brewery is located. He was was also the most famous Ninja of his time and retainer of Tokugawa Ieyasu, the famous unifier of Japan. This line of sake is brewed with local rice type 'Kami No Ho' and local yeast varieties MK-1 and MK-3, and features a more traditional taste that focuses on the flavor of the rice. While they go well with food, they are not specifically made as 'food sake' but rather to showcase the individuality of the local ingredients.
