Kubo Honke is a superb brewery that makes sakes that are a touch more challenging for the beginner, but incredibly rewarding for those who know what they’re looking for. This out-of-this-world junmai is aged a very long time (for sake) and is the one to try if you’re seriously interested in aged sake. Unbelievably smooth and complex, this sake delivers on all fronts with a punch.

Tasting Notes

Pronounced wild and gamey nose with notes of butter, cheddar cheese, honey ,wild truffles and marmalade seamlessly blended into a complex and powerful, rich palate with a silky, almost syruppy, but never cloying, texture. The palate is a feast of tertiary flavors reminiscent of sherry, brandy, tobacco, new leather and wet leaves. It displays complexity and depth right through to the end of the long, umami-laden finish. Generally med-dry but with hints of sweetness due to aging perfectly balanced by a crisp, tart acidiy. Seriously addictive. A great sake to relax with while watching old movies.

Sake With Character

Kubo Honke’s stylistic sake lays its foundation on the traditional Kimoto brewing method, which emphasizes umami and lightness at the same time as providing complex aromas. It has a refreshing acidity and a solid core of flavor that goes along with almost any type of food. The sharpness of full fermentation and the depth of flavor of several years of aging make Kubo Honke’s sake special. This sake is aged for 12 years and tastes incredible. But beware, if you are expecting a regular clear, white, easy-to-drink sake this is not it. This is the sake to get if you're looking for something unique and that will give your tastebuds a good workout.
