Ichido's Mission
'Sake is a product that is sometimes difficult to get into, but which offers a treasure trove of tastes for those who stick with it.' Realizing this, Ichido's founder Kaori decided to do something about it. Over 700 tastings were conducted to create a product that fulfills Kaori’s original goals. The sake is brewed using the natural local water, local koji and the breweries’ expertise in bottle fermentation. The result is a range of sakes that can be paired with a variety of foods or can be enjoyed on their own. Her creation, Ichido Sake, is designed to be a first step into sake and is easily enjoyable. The 'regular' sparkling sake is the most approachable of the three, and the touch of sweetness means it can even be paired with fruits or desserts.
